When you connect your iPod to your computer, the iPod's name will appear in the "DEVICES" section of iTunes - click on that. A "Capacity" bar will be displayed at the bottom of the screen. Do you see a yellow section that says "Photos" on this bar? What is the size reported below the word "Photos", in GB?

If you see that space is taken up for your photos in the yellow bar, it means that the photos are indeed in your iPod and I'm honestly not certain why they do not appear. However, if you do not see any yellow bars or the size for Photos is zero GB, it just means that the photos are not synchornized properly. Check your settings in the "Photos" tab on the same page. If iTunes was set to sync with iPhoto, go into iPhoto to check that the program is reading from the correct Photos directory and that your photos are showing up in iPhoto.
